Baking with Sugar and Alternatives

Because of the way sugar works in most recipes, baking without it is often impossible. sugar not only adds sweetness, but it also adds moisture and texture to baked goods. It makes the cookies spread on the sheet, creating a crispness that cannot be emulated without sugar. While doing away with sugar isn't always possible, often times the amount of sugar can be drastically decreased without much notice to the finished product. Often you can even get away with half or a third of the amount the recipe calls for.
There are many natural sugar substitutes that can be used to sweeten recipes when sugar levels are decreased. These same sugar substitutes have many functions outside of baking also. Honey, for example, is a healthier alternative that can be used in many baking recipes that call for sugar. Use of honey when baking often moistens the baked good and adds density. You just want to be sure you don't overdo it, as honey as a very distinctive flavor. Wholesome Sweeteners is a trusted brand for organic honey.
Another natural sweetener is maple syrup. Grade A maple syrup is delicate syrup that is most often associated with pancakes and breakfast foods. Grade B maple syrup is good for baking because it's stronger tasting, denser, and significantly less in cost.
