How to Buy a Roasting Pan

Yum! We can smell the turkey roasting already, with all of its juicy flavors and tender meaty parts. A good roasting pan will help you cook your turkey, pork, beef, chicken or vegetables to perfection all while holding juices in the deep pan. There are several brands and styles that offer roasting pans and roasting racks for reasonable prices and that will last you a lifetime. Most roasting pans are 16 X 10 inches but they do come in variable lengths and depths. Calphalon offers non-stick roasters with or without a rack. Both the roaster pan and the roaster rack have handles for easy lifting and carrying.
Johnson-Rose, ScanPan and Viking all have larger sizes of roasting pans that are suitable for that huge 25-pound turkey or if you're cooking for a large group. For a more classic design, go for copper roasting pans made by Mauviel. They come with brass or iron handles and a variety of sizes. In addition, you may be paying a little more, but copper will last a very long time.
Besides copper and stainless steel, roasting pans also come in porcelain. KitchenAid, Alexandrie and Belle Cuisine all carry very nice porcelain versions. Eclipse offers a roasting dish in black and red that looks nice against other dinnerware. Their products are made in France from high-quality porcelain.
Some roasting pans, like one from Prime Pacific, can be doubled as a lasagna pan. Others come in an oval shape like the one from All-Clad, made from stainless steel. M'Cook carries shallow roasting pans that are great for vegetables or pasta dishes. And Maverick offers a stainless steel mesh bbq roasting pan specifically designed for the grill.
