Neufchâtel hails from the town of the same name in Brayon Country in Normandy. The vast countryside appears as a clayey hollow dip surrounded by limestone hills and vast, lush grassy areas. These factors contribute to the unique flavor of the milk.

It has snow white surface rind that yields to an oozing creamy pate, to a crumbly, yet creamy center. When young, Neufchâtel's flavor is slightly salty but delicate and mild. After ripening, Neufchâtel becomes more pungent. We love this handmade cow's milk cheese for its characteristic country tang and buttery finish.
