Steaks: For best results thaw under refrigeration. Use within 5-7 days. Cook steak according to a meat thermometer rather than a time table. Remove steaks from grill, pan, or oven 5 degrees before desired doneness. Let steak rest 5-10 minutes before serving.
Rare: 125-130°F
Medium Rare: 130-145°F
Medium: 140-145°F
Medium Well: 150-160°F
Well: 160-170°F
Grass-Fed Filet Mignon: Season generously with salt and pepper after the meat has come to room temperature. For best results, sear on high heat for 3-4 minutes (on each side). Continue cooking over indirect reduced heat, cooking to desired internal temperature. Always allow steak to rest, place on tray and cover for about 5 minutes - then slice and enjoy.
Grass-Fed Ribeye Steaks: Season generously with salt and pepper after the meat has come to room temperature. For best results, sear on high heat for 4-5 minutes (on each side). Reduce heat by moving to a cooler spot on the grill or into the oven preheated at 375°F, cooking to desired internal temperature. Grass-Fed Beef Burgers: Can be cooked from a frozen or thawed state. Cook to at least 160°F internal temperature. Grill or Broil: Grill or Broil for 5–6 minutes per side. Pan Fry: Preheat a small amount of cooking oil in a non-stick pan over medium heat. Add burgers and pan fry for 6–8 minutes per side.
Grass-Fed Ground Beef (85/15 blend):
1. Preheat: Heat a skillet over medium-high heat.
2. Add Ground Beef: Place the ground beef in the skillet. For easier handling, break it into chunks as you add it to the pan.
3. Cook and Crumble: Let the meat cook undisturbed for about 2-3 minutes to brown, then begin breaking it up with a spatula or spoon. Continue to cook, stirring occasionally, for 7-10 minutes until fully browned and no pink remains.
4. Drain Excess Fat (optional): If desired, carefully drain any excess fat from the skillet.
5. Season: Add salt, pepper, or seasonings of choice to taste. Stir well to combine.
